Saturday 10-19
Breakfast- Grif helped make Banana Blueberry Muffins.
Lunch- Mock Tuna, lettuce and Tofurkey sandwiches made with mashed garbazo beans and vegan garlic aoili..
Dinner- My 4 year old helped me make Lentil Stew with carrots and spinach over Brown Rice.  Lots of cilantro! Bread. Green salad with oil/vinegar.  I still can't make a vinegrette worth cr*p. Adding wine to anything I cook makes it taste so much better.  Beer will do in a pinch.
 
Sunday 10-20
Made a Tofu Spinach Lasagna with Bechamel (white) sauce, but the oven (an antique O'Keefe and Merritt gas stove) flaked out and left it half-cooked.  Last-minute substitution: veggie tater tots, sliced tofu-pups in marinara sauce and broccoflower. (sp?) Not exactly gourmet, but acceptable.. Dessert: Baked Baby Bananas with Chocolate over vanilla soy ice cream.

Monday 10-21
I don't know what to call it- ChiliCorn Pie? With side of Carrots and Peas, Green Salad. 
Ingredients: 1 tube readymade polenta
                 1 can crushed tomatoes w/herbs
                 1 cup TVP
                 1 can chili w/beans
                 1 handful frozen corn w/peppers
Mix TVP /corn into tomatoes, let absorb.  Divide polenta into 2, mash into bottom of foil-lined 9x9 pan.  Top with TVP mix, then chili, then mash the other half of the polenta on top.  Bake 375 for 40+ minutes.  Very easy and good.  Maybe next time I'll add enchilada sauce and cilantro to the tomatoes and sub refried or pinto beans for the chili.

Wednesday 10-23
Kids stayed home "sick" today...(I think Grif was faking), had leftover frozen fake Chicken Noodle/Barley soup.
Dinner- New thing.  What to call it?  Dry-cooked (no oil)1 bag Nates No-meat Meatballs split in halfs, set aside in other pan.  Same pot, sauteed carrots, green beans, garlic, parlsley, white wine, beer.  Add 1 can crushed tomatoes w/herbs. At same time microwaved a handful of skinny curly multi-color noodles in water 1/2 inch below noodles.  3 minutes, stir, 3 min, stir, 3 min stir. Mixed meatballs, carrot mix, noodles. Biscuits.  Kind of bland, but family and friend liked it.  Gryphon (4)  said he wanted soup, too, as he didn't feel good.  I made what he said he wanted;  Thinly sliced 1 small carrot, 1/4 cup peas, onion and garlic powder microwaved in water to cover, dab of margerine. 1 tsp fake chicken stock powder, 1 squirt Dr Braggs.  Made 1 bowl, and he ate it up.

Friday 10-25
Tried 2 new recipes from VegWeb  today,  Tofu Spinach Quiche and Cream of Tomato soup.  The quiche was pretty good, but the soup was just ok.
   Wish us luck.  We are trying to get rid of all cheese/milk products in our diet after I read a nasty article in Harper's magazine about how much pus is allowed in milk products.  Ick.  We don't eat eggs anyway, so this would be our first go at being vegan.  I imagine it will be hard, especially for the children, because it seems there is milk in almost every food targeted for them.  It will be hard for me because I really like the taste of a SHARP cheddar, as well as feta, parmesan, brie, etc.  There are no soycheeses that taste like that that don't have casein (a milk protein) in them.  We haven't ever drank milk, but the children like yogurt and cheese.  So I will have to bite the bullet and get creative.  There is a book out called the "uncheese" book that I tried years ago when I wanted to go vegan, but the ingredients just grossed me out.
Today I used up an old biscuit mix I had that had cheese in it,  Wasn't that good.  I am looking for a replacement recipe for whipped cream for Thanksgiving.. found one that looks promising on a website.
